Mexican Soup with Heinz Hot Sauce

We were sent three jars of Heinz Hot Sauces and have been busy making meals and using them in our cooking.

Our favorite meal of the last couple of weeks has to be Mexican Soup:

Olive oil
1 Onion, chopped
4 garlic cloves, crushed
1 Chilli, finely chopped with the seeds removed
1/2 teaspoon of ground cumin
Can of plum tomatoes or pasata
1 1/2 litres of chicken stock (we used Bisto Stock Melts)
2 chicken breasts sliced
The juice of two limes
Heinz hot sauce, we used Chipotle and Garlic
Sour cream and spring onions to garnish

Add oil to a large saucepan,

Add the onion, garlic and soften for 5 minutes.  The add the chilli and cumin for one minute before adding the tomatoes and chicken stock.

Blitz with a food processor or hand blender till smooth and return to the pan.

Add the chicken and reduce the heat and cook for 15 minutes or until the chicken is cooked through.

Add the Heinz Hot source and put in bowls and garnish with sour cream and spring onions.
