Homemade Fishcakes....

We've started to eat a lot more fish lately - it's healthy, tasty and isn't as expensive as I thought it was.  I use this recipe a lot when we manage to get some reduced fish fillets in the supermarket at the end of the day.



5 fillets of fish (we used haddock in this recipe but any fish would be great)
5 chopped spring onions
Mashed potato
Breadcrumbs
2 eggs
Plain flour
  1. To cook the fillets you can either seal them in foil or use a fish cooking bag (I love these) and bake them in the oven for around 10-15 minutes.  You’ll know when they’re done as the flesh of the fish will turn translucent and will flake easily when you cut into it with a fork.  Leave it to cool.
  2. In the meantime, make the mash and leave it to cool (not that I would ever do this *cough* but you could use frozen mashed potato at around 90p for a big bag).
  3. Break up the fish and mix it into the mash along with the spring onions.
  4. Form into balls and flatten them to make your fishcakes.
  5. Then dip each fishcake into plain flour, egg and finally in breadcrumbs and leave in the fridge to firm up for 20 minutes or so.
  6. Heat some oil in a frying pan and fry each cake until it’s golden – don’t forget the fish is cooked, you’re just reheating it and adding some colour.  I used my Philips Airfryer for mine and they turned out lovely aswell.
