Blueberry Cakes....

This was supposed to be a recipe for blueberry muffins but it turned out more cakey than muffiny so I'm calling them blueberry cakes instead!


What you need

75g butter (softened)
75g sugar
2 teaspoons baking powder
1 egg, beaten
200g plain flour
125ml milk
100g blueberries
  • Gradually add the sugar and the egg to the butter
  • Mix 1 tablespoon flour with the blueberries and put to one side.
  • Sift the remaining flour together with the baking powder.
  • Fold the flour and baking powder into the butter, sugar and egg mixture.
  • Stir in the milk.
  • Mix in the blueberries.
  • Bake in greased muffin tins at 200 c for 25 minutes (ish) 

 
The cakes are absolutely delicious and would work perfectly with most fruits - I tend to make them with the fruit I pick up reduced at the supermarket at the end of the day.
