The tastiest and easiest way to use left over rice - Nasi Goreng

I am always looking for ways to use left overs.  I Hate throwing any food away and this week I have discovered a fantastic recipe for left over rice and chicken.

On Sunday we had a roast chicken dinner, followed by chicken curry on Monday and then Nasi Goreng on Tuesday night.

Nasi Goreng is fried rice in Indonesian and Malay and is considered to be the national dish of Indonesia.It is perfect for using left over rice and  it is one of those dishes that there isn't a right or wrong way to cook it and you can add what ingredients you like.

I used the following:

4 eggs
3 tablespoons of vegetable oil
left over chicken
leftover rice
spring onions (finely chopped)
Frozen mixed veg (sweetcorn, peas, pepper, carrots and broccoli)

You basically heat the oil in the pan and add the Nasi Goreng paste until it starts to smell fragrant, then add the chicken and vegetables (not spring onions) and cook for 5 minutes.

Add the rice nad cook for a further 5 minutes or until it is piping hot.  Whilst this was cooking I fried the eggs, but next time I will poach them for ease (plus the boys prefer poached eggs).

Serve with the rice in a bowl with the egg on top and then garnish with spring onions.

This is a delicious and as I say super fast meal and we were left with four empty bowls and the request to make it every week from the boys.  It is also very inexpensive to make too and there is enough in the jar for another two meals.
