We love crumpets and pikelets, they remind me of my childhood and seen as I can no longer seem to find pikelets anywhere to buy them, I set about making my own.
Recipe
500g plain white flour
350ml warm milk350ml warm water
5g powdered dried yeast
10g salt
1 tsp baking powder
Method
Well it really doesn't get much simpler than this, bung all the ingredients in a bowl and whisk. Cover (I use a shower cap) and leave for 3 hours. At this point the mixture should have increased and be full of bubbles. Do not stir it, those bubbles make the holes in the finished pikelets.
Heat a heavy bottomed pan and then dollop spoonfuls into it and cook for a couple of minutes a side.
This makes approx 24 pikelets and they are even batter when you reheat them in the toaster the next day and served with butter and jam.
