Guest Post - Vegetable Curry


The lovely Ang from Mum's Survival Guide is visiting us today and sharing her recipe for Vegetable Curry which looks gorgeous and looks ideal for using up your leftover veg.  I'm definitely going to add it to my meal plan for the New Year.  I'll let Ang tell you how she makes it....
I really wanted to tell you about my vegetable curry. I wasn’t sure how the family would react to it, but they all ate it without problems and said they’d eat it again.
I couldn’t taste enough curry powder in mine (and I don’t like spicy food) so I think I’ll add it at a different stage next time, but there was plenty to go around.
I got the recipe from here and adapted the recipe to suit our tastes.

Ingredients
1 large onion
3 medium size potatoes, cut into chunks
Half a cauliflower, washed and cut into florets
1 carrot, peeled and sliced
Aubergine or Green pepper (optional)
1 small tin (300ml) of processed peas
1 tbsp. curry powder
2 bay leaves
2 tbsp. tomato purée

(I didn’t include the pepper or aubergine, and replaced processed peas for frozen peas, however I added in some green beans)
Method
Heat 3 fl. oz oil in a heavy saucepan and fry the onion for a few minutes. Add the potatoes, carrots and cauliflowers and fry for 10 minutes. Add the pepper or aubergine, if using. Add curry powder and some salt. Cook for 5 to 10 minutes. Add the tinned peas, including the juice and add the bay leaves and tomato purée. Cover with water, boil and simmer for up to 30 minutes.
Serve with rice.
Serves 2-3

Despite saying serves 2-3 this served three generous portions and a small portion for Little Miss A.
